Healthy Fruit & Nut Balls.
This incredibly healthy, easy, no-cook, vegan recipe was given to me by my friend Kath. She produced these amazing high-protein energy balls as a sweet treat when we were in the middle of a day’s walking in Snowdonia in September.
I HAD to have the recipe!
🍒1 small carrot – finely grated
🍒2oz raisins – finely ground
🍒1 lemon and orange – grate zest
🍒Quarter teaspoon cinnamon
🍒Quarter teaspoon ground ginger
🍒Pinch nutmeg
🍒9oz pecans – finely ground
🍒6oz dates – stewed 5 mins in a little water, then mashed
🍒2oz desiccated coconut
- Mix it all, except the coconut. Blend together with a fork, masher, or food processor, until its a uniform thick paste.
- Take a teaspoon at a time and form into golf-ball size balls.
- Roll each in the coconut, and place on a plate. Store in the fridge.
Eat instead of a dessert. Its almost a Christmassy taste. Or after one of my fab Home Workouts! 💃
